Pesto Baked Chicken

Long time no see! In my typical summer fashion I again went MIA this summer. There's a lot to why I'll explain later but first I wanted to share with you the greatest recipe: baked chicken pesto.

Pesto: 
Adapted from food network basic pesto

2 cups basil 
2 cloves garlic 
1/3 olive oil
1/3 c pine nuts
Blend until smooth in food processor


What you'll need (adapted from Kalyn's kitchen)
2 c of pesto
2 pieces of boneless skinless chicken 
1 c Parmesan cheese
Nonstick spray
Aluminum foil
Casserole baking pan

Method: 
Preheat oven to 375
Spray pan with nonstick spray
Cut chicken in half
Pour 1 c of chicken on bottom of pan
Place chicken on top
Pour 1 c of pesto on top and spread evenly with spatula scraper
Cover with foil
Bake for 25-30 mins
Uncover
Add Parmesan cheese
Bake additional 5 minutes 
Enjoy!
