Blueberry walnut waffles

These gluten free delectables came to me with the combination of my roommates waffle iron being up for grabs and Pamelas baking mix being a part of my life.

Makes approx 5 waffles 
Adapted from Pamela's baking mix recipe 


What you'll need:
1. 2 eggs
2. 1 1/2 c gf flour
3. 3/4 c water
4. 1 tbsp coconut oil
5. 1 tsp vanilla 
6. 1/2 c walnut pieces
7. 1/2 c blueberries 
8. Earth Balance non soy butter (to your liking)
9. Honey or Syrup (to your liking)


Method:
Combine flour, water, vanilla, and coconut oil that has been heated (not boiling!) to be clear and in liquid form. 

***Pamela suggests adding yolk of eggs together and shocking egg whites in separate bowl then adding whites once stiff. I just added in the eggs as they come but I wanted you to have both options! 

Add eggs, blueberries and walnuts to mix. 

Mix well with whisk and pour into greased and hot waffle iron. 



Cook until golden on the outside and enjoy! We topped ours with honey and a bit of earth balance!
