Mouth watering eggplant appetizers

One week ago I was sitting at my friends dinner table excited to be eating with people who have the same eating habits as me (aka no gluten or dairy!). I was waiting for what I thought was a typical eggplant Parmesan meal. When the food came out and I dove in though,  I was amazed. The eggplant tasted different than any that I've ever had and I loved it. It literally melted in my mouth. My friend Julie was the chef so I asked her what the secret was. "Coconut oil is what really makes it," She exclaimed. Seriously your life will be changed after this meal and you'll want to load up on eggplant and coconut oil. 

What you'll need: 
2 eggs
1/2 c almond flour 
1/4 c Parmesan 
1 eggplant cut into round slices
2-3 tbsp coconut oil 
1/4 c marinara sauce (optional)

Method
1. Heat medium skillet with coconut oil 
2. Pour eggs into one bowl and almond/Parmesan in another and place eggplant in egg mixture, then Parmesan and then fry in skillet until golden brown. 
3. Add marinara to the top and enjoy!
