On the road again- travel food & goodbyes

This weekend I geared myself up for two years of goodbyes as I headed to Virginia. After spending two years of my life working in the Shenandoah valley, it has a soft spot in my heart. Despite its gorgeous views and out of this world local food, what really draws me to it is the people: locals and college kids alike.

My friend Annie had her last oboe recital before entering the convent. Yes, I have friends like Maria (please tell me you understand sound of music references) although I can't picture Annie ever running off to take care of a group of rambunctious children in the Austrian mountains and then falling in love with their captain of a father. She's more of the simple wearing a long white habit and black veil and teaching school kids about Jesus, music and everything in between. This was a long goodbye of sorts as the next time I'll see her we'll most likely be in a parlor in Nasville overlooking the grounds the Dominicans inhabit with sisters all over the place. Both journeys are beautiful and I'm excited to be apart of her joy filled life. Seeing her give everything to God in such a radical way is exhilarating and I only hope my small, simple life can bring as much joy to others. I also hope one day I can rock a sweet blue dress like the one she wore.

I also reunited with my team from last year for a short reunion, a sharing of where life was taking us and unsurity of when our paths will meet again. All in all in encouraged by their faith and excited to have been apart of their journey thus far. I'll always remember our jokes particularly the ones over a good beer.

Since I've been traveling a lot I've been trying to eat healthy on the road. This time that meant salads in jars, kind bars, apples, and a new favorite road stop pickup, pickles!

Sliced, juiceless and ready to eat on the road. I'm slightly obsessed with these little guys.

What are your favorite road trip snacks?
