For the first time in five years, I was home for Easter. It was so good to see friends, family and the sites I miss. One morning I went to a local breakfast joint in Indy called lincoln square and was so blown away by their food. I ordered the west coast omelet, hash browns, and cup of fruit instead of toast. I also ordered lots of coffee! The fruit was fresh and not from a can, the hash browns were crispy and the omelet was seriously the best omelet I've ever had in my life. It was stuffed with bacon, avocado and feta. I definitely have to try to recreate this and I hope you think about adding it to your breakfast ideas too! What did you do for Easter?
