Thanksgiving sandwich


This little number has been my staple food for the last week. I've ate different renditions of it for breakfast, lunch And dinner. You could say I'm a little of the obsessed side of turkey & cranberry combinations. It can also be made vegan easily! 

What you'll need:
1-2 Tofurkey slices 
Handful cranberries
2 slices tapioca light loaf bread
2 tbsp Avocado
2 slices cheese of choice (I use trader joes lactose free slices) 
1 tbsp cream cheese of choice spread (I use trader joes vegan) 
Optional 1 over hard egg
Optional vegan country gravy (see biscuits and country gravy post for recipe)
1 tbsp olive oil


Method
Cook cranberries on low heat with bit of oil in skillet until soft. Cook egg like you would normally in a skillet then remove. Make like normal grilled cheese (butter sides of toast, lay one side down on skillet and add toppings. Brown both sides). Pour 2 tbsp of gravy on top of sandwich and devour
