Mexican-style Philly cheesesteak

I went to Philly twice this past month and each time I salivated over everyone else eating a Philly cheesesteak but knowing my allergies wouldn't allow me to enjoy it. That's when I decided to make my own. Of course you should know by now with me that means putting a bit of a Mexican flair on it.

That's right Mexican-styled Philly Cheese Steak. 

What you'll need: 
Hot dog or sub buns (I used gf version) but I recommend saving money and making your own gf subs
1 pepper of your choice sliced (I used a bit of red and green)
1/4 c diced onion
1 jalapeño 
1/4 c soyrizo
1/4 c sliced mushrooms
1/2 tsp cumin
1/2 tsp chilli powder
1/4 c vegan shredded cheese 


Method:
1. Cut all your vegetables 
2. Place skillet on pan and add 1 tbsp oil to it
3. Add  peppers, onions and 2 diced slices of jalapeño to skillet. Once starting to soften add soyrizo, mushrooms, and seasonings. 
4. Once veggies are cooked and onions carmelized place in bowl and add cheese. Allow cheese to melt by stirring and possibly placing in microwave. 
5. Once cheese is melted add to a bun and enjoy! (Some might want bread toasted before enjoying)
