What you'll need
2 C uncooked quick oats (gluten free)
1/2 c chia seeds
1/4 c cashews
1/4 c pumpkin seeds
1/2 c uncooked red quinoa
1/4 c walnuts
1/2 c cranberries
1/2 c sunflower seeds
1 1/2 banana
1/4 c pumpkin purée
1/4 c agave nectar
1/4 c choc chips
2 tbsp peanut butter
Method
1. Heat oven at 375
2. Place oats, seeds (except chia), nuts and cranberries on sprayed baking sheet
3. Bake for 10-12 mins (watch walnuts as they burn easily)
4. Place qunioa, chia and all dry ingredients including toasted into large bowl
5. Blend bananas
6. Add blended bananas to wet ingredients in small bowl, once combined add to dry ingredients
7. Mix all ingredients and add to nonstick 9x13 pan
8. Cover pan and refrigerate for 2 hrs then enjoy!
