Holiday menu

Are you trying to figure out a simple yet healthy menu for the upcoming holidays? I'm on that route myself and the challenge is finding something the rest of my family will eat. I'll be tweaking recipes on the actual day and will post them later but wanted you to see what I had in mind for my menu on the upcoming holidays.


Appetizers
My family typically is really big on appetizers that we eat throughout the day. We have a formal meal time that is established ahead of time that we will eat an entree with a few sides but mostly it's all about the appetizers. Here's what I have in mind.

3. Gluten free crostini (gf french bread) with tofutti and jam adapted from cookieandkate

Main dish
1. Vegetable gluten free vegan lasagna adapted from onegreenplanet
3. Butternut squash and sweet potato casserole adapted from prettylifeinthesuburbs
5. Lots of roasted vegetables
6. Cranberry corn bread muffins

Desserts
1. Vegan gf cookies (pistachio choc chip and turtle)
2. Dark chocolate trail mix bites
3. Chocolate dipped clementines
4. Raspberry chia seed bars
