Flatbread pizzas

Today I was rushing around as usual making lunch for work in the morning (instead of prepping the night before). I was inspired by Taralynn's flatbread pizzas featured on her blog simply taralynn. I knew they'd be quick, easy and healthy. 

They taste great too! 



What you'll need:
1 slice or 2 tbsp chopped onion
1 clove garlic
1/4 c marinara sauce
4 slices chopped eggplant
1 tbsp chopped yellow sweet pepper
1/2 avocado
1 handful spinach leaves
2 flatbread wraps


Method:
Place flatbreads on greased cookie sheet
Preheat oven to 350
Pour marinara on flatbread
Place toppings on it
Bake for 12-14 minutes
Enjoy! 

I wrapped mine up into a wrap to make it a portable walk to work kind of meal :)
