Healthier cookie cake


My birthday was a few weeks back. I was looking for a lighter cake. I'm not much of a fan of frosting and heavy cake anyway. My roommate tried to make a watermelon cake but the watermelon won the battle. Impressive knife skills are apparently a must. So with a cookie craving and a cookie mix already made in the kitchen, I went to work on this little number. 

What you'll need:
1. Vanilla yogurt of choice (soy, coconut or milk based)
2. G free life choc chip cookie mix
3. Fruits to top cookie with
4. Flax seed
5. Vegan butter or melted coconut oil
6. Cream cheese (vegan or milk based)

Method:
Prepare mix by mixing in 1 flax seed egg and the amt of prescribed butter on the package (or sub equally with melted coconut oil which is the route I went).

Once mixed place into cake pan and bake based on box instructions

Mix 1/2 c yogurt and 1/4 c cream cheese together and blend until smooth and a thicker consistency than plain yogurt. It won't be perfect (little lumps are okay!) 

Once cookie is cooled use a spatula and pour yogurt on top

Top with fruit of your choice
