Oatmeal for lunch!

Yes my friends, after an accidental hiatus I am back with a recipe that is...shall I say? Pure genius. 

I'm trying to limit my grains for workout purposes so gluten free has been the way for me recently. I almost always start my morning off with oatmeal. A hearty carb to start my day off full and ready to take on what is ahead. For those mornings that I opt out of a grain for bfast and eat a more protein heavy meal I struggle with finding a way to put oatmeal into my day. Haha yes I love it that much. Voila savory oatmeal for lunch was born. It includes curry, garlic, onion, mushrooms and carrots and trust me...you'll be wanting to eat oatmeal for lunch a lot more often after trying this. 


Lunch Oatmeal
1/4 c Oatmeal (uncooked)
1/2 c water
1 tsp curry
3 mushrooms of your choice
1/3 cup chopped onion
4 chopped baby carrots
2 pieces of clove of garlic
1 tbsp lite soy sauce 
1 pinch salt

1. Cook oatmeal how you normally do
2. Heat olive oil in pan then add onion and carrot
3. Once onion and carrot are well cooked add garlic and mushroom
4. Once everything is cooked add curry 
5. Pour oatmeal into a bowl and then pour everything else on top, add soy sauce and salt
6. Stir and enjoy :)
