Moving on to food, I've recently gone on a gluten free journey. Mainly I'm curious to what this life is like but also I'm trying to be really health conscious as I try to lose weight. I'm on a pretty intense meal plan and exercise routine. This isn't permanent and don't worry I'm making sure to do it the right way and have a dietician friend who keeps me in line :) I've packed on quite a bit of weight since I was bullied in middle school and I've spent the last few years trying to take it off. It's a journey and I'm learning as I go.
So far I haven't even desired anything that requires gluten. I've been packing in a lot of protein, oatmeal, fruits and veggies for my workouts. Today though, I woke up craving something dense and floury. I'm trying to do the gluten free endeavor without really expensive alternatives. So after doing some research I decided on cornmeal blueberry muffins. I used oatmeal flour that I ground myself. Talk about saving a lot of money!!!
If you're looking for a sweet breakfast muffin...this isn't your type. Particularly because there is no added sugar. However, adding some extra honey on top of these when they come out of the oven can satisfy your sweet tooth.
Lemon Blueberry Coconut Cornmeal muffins
1 1/2 C Oatmeal Flour (instructions below)
1 C Cornmeal
1/3 c coconut
1/2 C frozen blueberries
1/3 c oatmeal
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 tbsp honey
3 tsp lemon juice
3/4 C applesauce
1 3/4 C almond milk
Combine dry ingredients, combine wet ingredients, add blueberries last (make sure they're starting to thaw before throwing them in).
Pour into muffin tins
Bake at 350 for 10 mins or until cooked all the way through
Pour honey on top and enjoy :)
*disclaimer- I tend to be the kind of baker that throws things in as I go. I'm not much of a measurer but I try to ballpark measurements for you guys. Consistency of this batter should be like pancake batter.
Oatmeal Flour
1 1/2 C Oatmeal
Coffee Grinder
Pour oatmeal into grinder and grind until flour like consistency
