Bill's Black Bean Breakfast Burritos and White Peach Shaken Tea

Today you're in for a double recipe blog post. My homeschooling friends introduced me to the black bean burritos and I added a bit to make them breakfast for my team. We have a team breakfast every week and this week was my turn. I'm not usually a black bean in the morning type of person. All I'm saying is that when you see a family of eight devour any kind of food, you treat it like heaven's gift to the world. I knew as soon as I witnessed them and their love for the burritos that I had to make them myself. The cream cheese makes them so breakfast worthy though. I promise you won't regret it! This was a big hit in my house. We indulged in many burritos and shaken tea lemonade. Hope you enjoy!


Bills Black Bean Breakfast Burritos

2 tbsp olive oil
2 tbsp garlic
1/2 diced onion
1 diced red pepper
2 cans black beans
3 slices of jalapeno
8oz cream cheese or tofutti to veganize it
scrambled eggs or omit to veganize it
hash browns
hot sauce--- I use Valentina :)
tortillas

Method
1. Chop the onion, pepper and jalapeno and saute in skillet with olive oil until soft
2. Add garlic and black beans to skillet
3. cream cheese
4. In separate pan scramble eggs
5. in separate pan cook hash browns
6. Warm tortillas individually in microwave
6. Add hash browns, black bean mixture, hot sauce and scrambled eggs to a warmed tortilla

I found a recipe on pinterest for Starbucks Iced Passion tea lemonade. I decided to make my own version.

Shaken White Peach Raspberry Tea Lemonade

Method:
Boil hot water
Add 3 tea bags of your liking to a glass jar (I chose 2 white peach Celestial Seasonings packets and one raspberry Celestial Seasonings packet)
Boil 1 cup of water and 1 cup of sugar in a saucepan on the stove until boiling and sugar dissolves into water. This will be sugary syrup.
Add hot water
Add ice cubes
Once cooled add tea to a cup. Fill the cup half full.
Add 1/4 cup lemonade
Add 3 spoonfuls of sugary syrup to the glass
