Quinoa Kale Agave Salad

I've never been a quinoa fan. I tried it once and wrote it off based on the bland taste and texture. I desperately wanted to like it based on the fact that it's a complete protein and a super grain. I have a friend that's gluten free though and her stir fried quinoa gave me hope to try quinoa once again. I found a recipe on Pinterest that mixed spices with honey in a salad and it inspired me for the recipe. My roommate and I were ridiculously impressed with how good it was. It made us both change our mind about quinoa.



Cook time: 20 mins.
Serves 2 generously
adapted from Dishin' & Dishes

What you'll need:
2 C Quinoa
1 Tbsp Old Bay
1 pinch salt
1 Tbsp Garlic and Herb Spices
1/4 C olive oil
2 Tbsp Agave nectar or honey (if you're not opposed to it)
1/2 grated carrot 
1/2 red pepper chopped
2 C chopped kale
1/2 chopped cucumber

Method:
1. Cook quinoa as instructed on box. 
2. In medium sized mixing bowl whisk old bay, spices and olive oil together. Then add honey or agave and mix well. 
3. Add rest of ingredients to mixing bowl. The dressing should have a bit of liquid left to saturate the quinoa but if it's too runny add more vegetables. 
4. Once quinoa is cooked you can rinse it with a strainer, pout it into a serving bowl and add vegetables and dressing.
