Memories incorporating food are my biggest inspiration in this blog. I only have a few things that I always go back to: a caprese salad I had in Denver, blueberry banana pancakes and pumpkin donuts in Virginia, and lemon seasoned green beans and sweet potato salad from Indiana.
Memories are powerful. What memory inspires you?
What you'll need:
2 sweet potatoes
1/4 c dill pickles
1/4 c green onions
2 hard boiled eggs
3 pieces diced turkey bacon
1 avocado
1 tsp paprika
2 tbsp hot sauce
3 tbsp mustard
2 tbsp almond milk
Salt and pepper to taste
Method:
1. Dice and boil sweet potatoes for approx 5 minutes
2. Drain potatoes, rinse in cold water and place in bowl. Place bowl in freezer for a few minutes to chill potatoes if eating right away
3. Dice eggs, pickles, avocado, onions and bacon
4. Add all ingredients together in bowl, mix and enjoy!
