Toasted Coconut Pancakes


I went grocery shopping at Trader Joe's last night. Yeah I know it was a Friday night. I love grocery shopping and after the flu, yes 5 days of high fever, aches, severe congestion and sinus pressure, I wanted to get out and feel like a human. Plus I knew trader joes wouldn't be packed and I could almost have the store to myself. Chyeah! 

So I'm walking through the aisles basking in the goodness of good, wholesome, fun gluten free/ dairy free food. Then I found the box. The box I've always wanted to try. 

Toasted coconut pancake mix. There it was in all it's glory and I couldn't eat it because of the gluten. I was so mad. I almost bought the box in spite. I knew what would come though. Terrible pains in my stomach and awful things that you really just don't want to know about.

This morning it's all I wanted. So I made my own. The gluten free version. 


Toasted coconut pancakes

What you'll need: 
3/4 c gluten free flour
3/4 c oats
3/4 shredded coconut
1 tsp baking soda
1/2 tsp baking powder 
1/4 tsp salt 
3/4 c vegan buttermilk {1 tsp apple cider vinegar & 3/4 c dairy free milk}
1/2 c dairy free milk
2 tbsp sunflower oil 
1 tsp vanilla
1 egg {3/4 c applesauce}
2 tbsp & 2 tsp truvia or stevia 
2 tbsp chopped walnuts
1 tbsp chopped cashews

Toppings
1 tbsp butter 
1 sliced banana {these could go inside too}


Method:
1. Finely grind oats. Add oats, flour, coconut, soda, powder and salt.
2. In another bowl make buttermilk. Add ingredients, whisk together and set aside for 5 mins. 
3. Once 5 mins has passed add buttermilk and all wet ingredients (egg, milk, buttermilk, sugar, oil) to blender. Blend until frothy (like 1 min). 
4. Pour wet ingredients into dry bowl add nuts & mix. 
5. Pour 3/4 c sized batter into hot oiled skillet. Flip pancakes over once you see bubbles. Repeat, eat, love. 

Makes about 10 pancakes 

So I've never had the toasted coconut pancakes from trader joes but I think I already like mine better. 😉
