Living healthy beyond boundaries

I became a vegetarian my sophomore year of college. It was one part a challenge for myself to try something new and one part for health reasons to get myself on the right track by paying attention to what I ate while incorporating more vegetables and fruits into my diet and one part intrigue.


The journey was a long one filled with learning how to eat healthy with proper portions, learning new foods that range from yuca to flax and chia, to ruts of eating too many burritos and french fries and having so low amounts of b12 with countless monitoring that I was forced to go on vitamins. The real kicker into thinking about a diet change though was realizing that I had an intolerance to gluten and dairy a few months ago. Being vegetarian on top of all that limited my diet to a point that I was living off vitamins, constantly feeling hungry and eating too many calories and fats each day.

So I decided to make a change, try something new and incorporate budget friendly as hormone free as possible and lean white meats. It was a weird transition and took weeks to be able to stop hiding my meat under bowls of vegetables. From the beginning though I felt fuller, was able to be off all the vitamins I was taking because I was naturally getting everything I needed in my diet and felt better. 


What I've learned is that health and nutrition is a journey. Instead of depriving myself of food though I'm working on having a bit of everything within moderation. 

I figure that this change will alter my recipes, change my audience, and thus I think it's also time for a blog makeover including a name change. 

I will still include vegan recipes but hope you'll be open to seeing a few recipes with lean poultry and fish. I don't expect your journey to be exactly like mine. No matter what though I hope this inspires your journey to include moderation and not deprivation.
