Growing up I would wake up on Saturdays and Sundays to the smell of chorizo and eggs cooking in a skillet. My dad would scramble them up and throw them in a floured tortilla. Those are my favorite smells, taste, my favorite memories with my family. Waking up on Monday I needed those smells and taste to fill my mouth and remind me that even when I like thousands of miles away, my family is always nearby. Here's my healthy version of dad's chorizo and egg burrito.
What you'll need
4 romaine lettuce hearts
1/4 C Soyrizo
2 tbsp corn
2 eggs
1/2 avocado
2 tbsp salsa
2 tsp Valentina
1 tsp verde sauce
Method:
Cook the soyrizo, corn and egg together.
Add into hearts of romaine.
Top with avocado, salsa and hot sauces
