10 min Taco Salad Bowl

At the end of a work week like most adults, I'm exhausted. Plus who wants to cook when you can drink a margarita, play Life and watch Sister Act? Uh oh I mean not everyone does that with their Friday evenings? #partylikeacatholic


Back to the taco bowl though. I'm telling you this is your ticket to a fast, light, Mexican craving fixed meal. 



What you'll need:
1 head of romaine lettuce chopped
2 tbsp of salsa
2 tbsp guacamole 
1/2 C chickpeas
1/2 C soyrizo (trader joes version beats all others in my book)
1 tbsp taco seasoning
**1/2 C cheese (for milk lovers out their) or vegan cheese for us plant lovers


Method:
1. Cook chickpeas with 1 tsp olive oil, taco seasoning in skillet. 
2. After about one minute of cooking chickpeas add soyrizo and cook until approx 165 degrees. 
3. Place chopped lettuce in bowl, add chickpea/soyrizo mixture, salsa, cheese and guacamole. 

Enjoy like my crazy teammate/roommate did!
