So today I looked up a tofu scramble and tweaked it quite a bit to make it my own. It was one of my favorite breakfasts so far and I can see a lot of Saturdays starting with this meal.
What you'll need:
2 pieces light tapioca loaf bread
1 tbsp nutritional yeast
1 tsp curry
1 tsp 21 seasoning salute
1 tsp chili powder
1 tsp garlic powder
2 tbsp salsa
1/2 avocado
1 clove garlic
1 slice diced onion
1/3 c black beans
1/3 c tofu
1/4 c diced bell pepper
1/4 c sliced mushrooms
2 tbsp water
2 tbsp olive oil
Method:
1. Heat olive oil in skillet
2. Add mushrooms, onions and bell peppers and cook until starting to brown
3. Add garlic, beans, tofu and spices and water
4. Cook for approx 8 mins or until everything is combined and heated through
5. Toast tapioca bread, mash avocado on top and add tofu scramble open faced on top
6. Add salsa
7. Enjoy!!
