Quinoa fried rice

I don't know about you but I have a problem. I'm addicted to Asian food. Noodles, rice, spices, sauces. If I could live at a Thai restaurant I would. Here's the thing though, most of the food is filled with oils, preservatives and overly processed carbs. In an effort to try to eat even healthier but still give in to my food cravings once in a while I made (drumroll please) quinoa fried rice. For all you fried rice skeptics out there I'm telling you....this is just as good as the real deal. So pour yourself a tall glass of water and get to cooking this! 



What you'll need:
2 tbsp olive oil
2 tbsp low sodium soy sauce
1 tsp lemon juice
1/2 bell pepper
1/3 c diced onion
1/3 c diced mushroom
1 tbsp ginger
1 clove diced garlic
1/2 can of peas
4 diced baby carrots
1 c cooked quinoa
2 tbsp panko breadcrumbs
2 eggs (optional for all you veganers out there.. I do recommend putting in some nutritional yeast to give it some flavor though!)
1/2 vine ripe tomato
1 handful spinach



Chances are your backyard may look like this. So warm food that fills you up will make you feel brand new. 

Method:
Heat olive oil in pan.
When heated add diced carrots, garlic. When close to softened add onions, bell pepper, and mushrooms.
Stir in all other vegetables (peas, tomatoes, and spinach). Let spinach wilt a bit and then add quinoa, already scrambled eggs and panko crumbs.
If vegan this is when you'd add in your nutritional yeast with a bit of water. 
Add soy sauce and lemon juice. 
Once everything is combined and heated place in a bowl and enjoy!
