Brownie (hidden peanut butter!) crumble cookie





Today was an off day for me. I woke up at 6:45 for "power hour" with my teammates. That's one hour of prayer and sacrifice (i.e. being up so darn early) for the students on the campus. Typically on Fridays I am going from 1pm-6:30pm but for some reason this week my entire schedule for the day was cleared. It's a good thing too because I woke up after my 'nap' with the largest headache I've ever experienced. I was in a hazy state until 3:30pm (yikes) but then I was determined to make brownie cookies. I got up, altered the recipe and seriously made the best cookies ever. It was magical and you're about to experience it.

Brownie (hidden peanut butter!) crumble cookie

What you'll need:
1/2 C Earth Balance Butter
1/2 C sugar (I'm a Stevia girl)
1 tsp vanilla
2 tbsp water
1 tbsp oil
1 C whole wheat flour
2 tsp baking powder
2 tbsp cocoa powder
1 tbsp natural peanut butter
pinch of salt
2 handfuls of chocolate chips

Method:
Melt butter in Microwave (make sure it doesn't boil or get hot!). Add to large bowl with sugar. Once creamed, add vanilla, water, oil and baking powder.

Then add flour, cocoa powder, salt.

Then add peanut butter and chocolate chips

Place spoonfuls of cookie onto an ungreased baking sheet. Bake at 350 for 8 mins.
