Vegan Chili Fries
Wow is all I can say. This was one of my crazy moments in the kitchen where I kept pouring things into the pan and somehow it turned out well. Doesn't it look scrumptious?
I didn't exactly do measurements this time around but I'll try to give you the exacts.
What You'll Need:
2 C Boca meat crumbles
1 C Black Beans
1 cookie sheet full of sweet potato fries
1/2 C V8 Juice
1/4 C Spaghetti Sauce (I used Prego Heart Healthy Roasted Red Pepper)
1 TB garlic
1tsp bbq sauce
1 small squirt of yellow mustard
1 tsp lime juice
1/4 tsp oregano
1/4 tsp black pepper
1/4 tsp cumin
1/4 tsp paprika
Method:
Cook Sweet potato fries in oven.
On stove place a bit of olive oil in a saucepan with Boca crumbles. Stir until boca is unfrozen and heated. Then add black beans, garlic and spices. After a few minutes add bbq, mustard, lime juice, v8 juice and spaghetti sauce. Stir until is bubbles. Add Daiya cheese into chili and stir until melted. Place fries once baked into a bowl, add chili on top and a dollop of coconut milk (as the sour cream)
