That's How I feel after eating these delectable little beauties. Unfortunately the endeavor to make them was a little messy.
Adapted from I breathe I'm hungry:
What You'll Need:
1 head of cauliflower
2 TB Earth Balance
2 TB Coconut Milk (refrigerated for at least 1 hr)
4 TB Corn Meal
8 TB water (mixed with Corn Meal)
1/3 C Sharp Cheddar Daiya Cheese (optional)
Salt and Pepper (season)
Method:
1. Clean and trim cauliflower. Cut into Florets. Add 2 TB coconut milk and Earth Balance to microwave safe bowl with cauli. Mix well! Microwave cauliflower for 5 minutes or until soft and translucent. Make sure to stir cauli halfway through and add 1 TB water to bottom of the bowl if the cauli looks like it might burn.
2. Once cauli is cooked transfer it to a food processor with Corn Meal/water mixture and cheese. Blend until chunky (the consistency of oatmeal). Season with salt and pepper.
3. Cool in fridge for 1 hour so that they hold.
4. Use a pastry bag with round or star tube w/ about 3/4 inch opening. Spray bag with nonstick spray! If you don't have a pastry bag (like me) you can use a spoon and mold together the bites, although they don't hold together as well and aren't nearly as pretty looking. They taste great though!
5. Make 1 inch cauliflower bites onto a greased cookie sheet. Bake at 375 for 15 mins or until edges are brown.

I love these little bites. Especially when I'm on the go or looking for a quick snack. I definitely recommend cooking these on a day where you have a lot of inspiration/time. For me, my weekends are always filled with fun trials and errors in the kitchen. I try to make fun/adventurous food where during the week I don't have the time. These were definitely adventurous! I had a few messy situations with making these. Mainly with the transferring from bowl to processor to bowl. You definitely dirty a lot of dishes! I also think my bites would've turned out better with the pastry bag and if I would've kept a closer eye on them in the microwave/ actually coated them with the milk and butter. You live and you learn though right? My tummy was happy either way and they tasted delicious.
