Veggie sloppy joes

You know those recipes that you try and something is off so you keep adding ingredients until it tastes good? Well this is just that! I started off trying to make beef & broccoli and ended up with well... 


What you'll need:
1 lb ground turkey 
1/2 bag frozen broccoli 
1 orange bell pepper diced
2 cloves garlic 
1 tomatoes diced 
1/3  c green onions
1/2 c broccoli
1/3 c chicken stock 
1 tbsp olive oil 
1/4 c bbq sauce 
1/4 c organic ketchup

Method:
1. Brown meat with olive oil in skillet
2. Add cloves, bell pepper, and broccoli 
3. Once veggies are cooked add onions, tomatoes, chicken stock, bbq sauce and ketchup.
4. Heat and enjoy! 
I recommend with tortilla chips!

Mexican fried rice

This is one of those I have random things left in my refrigerator meals. Sunday night I was tired and at the point where I didn't want to wait I was sooo hungry. Thus protein = eggs but I didn't have enough vegetables for an Asian dish. So Mexican fried rice was born. Let's see if you can handle the heat! 🍚🍲


What you'll need: 
1 cup cooked quinoa 
2 eggs 
2 cloves garlic diced 
1/3 c green onion 
1/4 c red bell pepper
1/2 c salsa
1 tbsp hot sauce 
1 tbsp olive oil

Method: 
1. Cook quinoa 
2. Place oil, diced garlic and diced red pepper in skillet 
3. Place eggs in skillet and scramble eggs 
4. Once eggs are scrambled add quinoa and all other ingredients just until it is all heated 
5. Enjoy!
