The City of Angels & recipe revamped



It's been so long! Last week I spent in the beautiful city of angels chillin with my homies. Homies meaning six college students and three missionaries from all over the country, the homeless of Hollywood & Skid Row, some awesome friends in Hollywood, and former gang members who are in the program at Homeboy Industries. 

I can't tell you how blessed and healed I feel by the conversations, the smiles and the encounters I was able to have. Words really just don't do it justice. 



These are a few of the moments that captured my heart. My birth state never ceases to amaze me. My heart was so sad to leave but I know that the coast of California is like my Trevi fountain and I will be back again. 

 

As promised I also have a recipe for you all. I'm currently gearing up for another week of travel, this time to Indiana. So cooking hasn't really been happening as much as I'd like. So this was literally the one meal I made this week. In retrospect I think it'll be good to give myself a break before Easter and the cookig frenzy that will ensue. 

Revamped Veggie Turkey Meatballs

 
What you'll need: 
1 pkg ground turkey 
2 tbsp chopped celery
2 tbsp chopped carrot
2 tbsp chopped broccoli
1 tbsp diced garlic
1 egg
1 tbsp agave nectar 
1/4 c oats 
2-3 dashes of ground salt & pepper 


Method:
Combine egg, ground turkey, oats, chopped veggies, salt and pepper into a bowl. Once mixed well form into small balls and place in oiled pan skillet. Brown all sides until well cooked (no pink inside obviously) so about 15 mins. 

I ate mine with marinara sauce from a can 😇 and a side of sautéed broccoli.

Veggie turkey meatballs


I've been trying to find fast, creative ways to eat as many veggies as possible. Let's just say that this week I was mostly unsuccessful. I ate a lot of unclean trader joes food. It was so good! I didn't feel too well after millions of gf Oreos and chocolate coconut ice cream though. 

After running from meeting to meeting all week and wanting to get myself back on the healthy train, I decided on ground turkey for dinner. I saw a recipe on Martha Stewart's blog from Jessica Alba. It included celery, carrots, onions and garlic inside turkey meatballs. It sounded really delicious. So I adapted it and made my own. My roommate was working so I enjoyed eating my dinner by myself before another meeting. 



What you'll need: 
1 pkg ground turkey
2 tbsp chopped onion
2 tbsp chopped celery 
2 tbsp chopped carrots 
1 egg
1/4 cup oats
1 c marinara sauce 
3 tbsp BBQ sauce 
1 tsp black pepper 
1/2 tsp salt



Method: 
Combine egg, ground turkey, oats, chopped veggies, salt and pepper into a bowl. Once mixed well form into small balls and place in oiled pan skillet. Brown all sides until well cooked (no pink inside obviously) so about 15 mins. 
Add marinara and BBQ to skillet and stir. Once sauce is heated pour into bowl and enjoy. I ate mine with sweet potatoe chips and an avocado & kale salad.
