BBQ chicken Pizza

Sorry it's been so long since a post! My best friend has been visiting all week so I've been traveling with her.
Here's my week recap and a BBQ pizza that is a MUST.

Ellen came to visit me this week so we menu planned ahead of time so we wouldn't have to eat a ton of takeout. One of the things I was really craving was a BBQ pizza. I'm a pizza fanatic. If I could I would eat pizza at least twice a week. After realizing I had a gluten intolerance everything became much more difficult including finding a good pizza crust.

The pizza cravings finally took over and I finally dove in and attempted this one. I still think it needs a bit of work but it'll do justice now for my pizza cravings until I learn to perfect it :)

Pizza crust derived from: baked by Rachel cornmeal pizza crust

What you'll need:
Crust
3/4 C warm water
1 packet active dry yeast
1/2 tbsp granulated sugar
3 tbsp olive oil
2c all purpose gf flour
1/2 c cornmeal
1 tsp salt

Toppings
Trader Joes BBQ sauce
Chopped chicken of your choice
Cheese of your choice (we used goat)
Chopped onions

Method:
1. Use packet to make active dry yeast (warm water, yeast and sugar). Let sit 5-10mins then add olive oil.
2. In a mixing bowl add cornmeal, flour and salt.
3. Then add liquid ingredients
4. Form crust into ball (should not be sticky! If sticky add more flour)
5. Let rise (most like for this to double in form but I waited 30mins)
6. Roll onto greased pizza sheet and bake for 20 mins or until edges are slightly brown at 450
7. Add toppings and bake for approx 15 mins or until onions are cooked, cheese is melted and edges are browner
