Black bean & sweet potato quinoa

Craving quinoa and looking for new ingredients to add in? You've come to the right source then. This scrumptious meal is packed with protein and flavor that'll brighten up any winter day. 

What you'll need:
1 cup quinoa (I mixed have white & half red)
1/4 c corn 
1/4 c black beans
1/4 c chopped red onion
1/2 medium sweet potato
1 tbsp Parmesan cheese

Method:
1. Cook quinoa on stovetop and follow directions on bag
2. In skillet cook chopped sweet potato, once becoming soft add onions and cook until translucent
3. Put skillet on low heat and add all ingredients for 2-3 minutes or until warm
