Half the calories breakfast burrito

After a ridiculous amount of traveling I've finally moved into my new semi-permanent residence in Connecticut. Yep that's right this Indiana girl has moved after two years of mission work in Virginia to the great state of Connecticut where things are a little more fast paced and the melting pot is here in full force. 

So far I'm in a bit of a culture shock but enjoying what Connecticut has to offer...there's so much to do! 

I'll be posting soon on my apt decor but I'm not exactly finished yet so in the meantime I wanted to give you all a quick recipe that's close to my heart. 

It's close to my heart because I grew up eating this burrito on most Sundays. My dad would get up early and whip this guy up in no time. It made our house smell wonderful and has always been my favorite breakfast food. Plus having Mexican blood in you means you crave chorizo like none other. Or maybe that's just my family :)



The traditional chorizo burrito is packed with Calories and totals around 750 calories! Yikes! 
I cut the calories in half using vegetarian ingredients. 

Chorizo Breakfast Burrito
What you'll need: 
1. 1 tbsp olive oil
2. 1 egg
3. 70 g soyrizo (I'm a big fan of trader joes)
4. Vegan cream cheese (again trader joes is my man) 
5. Gluten free tortilla (I'm a fan of G free life from Aldi)


Method:
1. Heat frying pan with oil and add soyrizo and egg in. 
2. Scramble egg with soyrizo
3. Heat tortilla up for 30 seconds in microwave
4. Add 2 tbsp vegan cream cheese to tortilla 
5. Once soyrizo egg mixture is cooked add to tortilla
6. Roll tortilla into a burrito and enjoy for only 410 calories!
