Lemon Poppyseed Chia Pancakes

I'm not a huge fan of pancakes. I'm not exactly sure why except I've encountered a lot of pancakes that are dry and flat. Mostly though, As crazy as it sounds, I hate flat food. Crepes, pancakes, and sandwich bread are not appealing to me. I know that pancakes can be a nutritious thing with stuffed with all the right ingredients and smothered in peanut butter instead of syrup. I love lemon and poppyseed so I figured this might be a first step into my pancake loving days. I loved these healthy, nutritious, fluffy and moist pancakes. 

*note I like things very lemony so you can add less lemon of you're taste buds don't enjoy it as much as mine do. 



Inspired by Joy the Baker

What you'll need:
2 tbsp Florida cane sugar
1 tbsp shredded coconut 
2 tbsp lemon zest
2 tbsp lemon juice 
1 tbsp poppyseed
1 tbsp chia seed
1/2 tsp baking soda
1/2 tsp baking powder
3/4 c applesauce
1 c nondairy milk
1/2 tsp vanilla
2 tbsp water
1 c whole wheat flour
1 tbsp olive oil (for skillet only)


Method 
Mix dry ingredients together in large mixing bowl then add wet ingredients. Mix well. Pour oil Into skillet or on griddle and pour batter once skillet is hot. Wait until many bubbles form on top of skillet and turn over to brown other side. Top with peanut butter and enjoy :)
