Open Faced Tofu, Pear & Asparagus Sandwich

Week one of the Vegan diet. It was one of those days where I'd already consumed a lot of carbs and I was desperately looking for something hearty, juicy, and sweet but savory and dairy free. What was the solution? Yep that's right, an open faced fruit AND garlic sandwich.

What you'll need:
6 Asparagus stems
3 slices of Brown Pear
1 tbsp Olive Oil or Pam
1 tsp Minced Garlic
1 slice of Extra Firm Tofu
Spices. I used Grill Mates Garlic and Herb Salt Free Seasoning
1 piece of whole wheat bread

Method:
Cut a slice of Extra Firm Tofu. Rub it with Seasoning.
Oil a frying pan and brown the tofu.
After the tofu is browned put it off to the side. Using the same pan (if you don't like to dirty too many dishes like me) then add a bit more Pam or olive oil and the slices of brown pear. Once the pear is beginning to be carmelized but has about a minute of cooking time left add the minced garlic.
Steam the Asparagus. I buy the steamer bags because it makes life easier when you're on the go but want a steamed vegetable.
Toast the bread.
Assemble the sandwich. Bread at the bottom, then the tofu, asparagus and pear.
