I bought a bunch of peppers and tomatoes at the farmer's market a few weeks ago. I had at least 7 Roma tomatoes that were desperately in need of being used. I had seen different caprese recipes on Pinterest and decided join the caprese bandwagon... so to speak.
What you'll need:
8 tomatoes of choice (I recommend cherry)
3 Slices (or enough to stuff) of mozzarella cheese (I used whatever I had which ended up being cheddar though)
Handful of basil leaves or spinach
Italian Dressing
Method:
1. Cut top of tomatoes and bake in a oiled roasting pan for 10 mins at 350 degrees or until tomatoes are soft
2. Stuff tomatoes with cheese, basil and spritz lightly with dressing
3. Bake for another 10 mins or until cheese is melted
