Mushrooms...gone green!

Spinach and Avocado Stuffed Portobello Mushrooms




What you'll need (Makes 2 mushrooms)

A few slices of avocado
1/4 cup frozen, finely chopped spinach (thawed)
Handful of cheese (or to your liking)


Method
Cook the spinach as directed
Place into bowl
Add avocado
Mash the avocado in with the spinach
Fill into mushroom caps
Bake at 375 for 15-20 mins (until shrooms are soft)
Add cheese halfway through the baking process

Enjoy!
