Healthy Spinach Artichoke Dip

Hey guys! Three posts in three days from me... woah that must be a record! I have a lot more free time now that I'm living in a real apartment and cooking food on a regular basis. Today I had a bag of wilting spinach. Can't let that stuff go to waste! So I knew it was time to make a spinach dip. Normally I make one that requires super fatty sour cream and cream cheese. It's delicious but I was going for more of a healthy route.

Here's my version.

What you'll need:
1/3 c olive oil
8 oz bag of fresh Spinach
1 c plain greek yogurt
Handful of mozzarella cheese
1 6 1/2 oz jar of artichokes drained
1 tsp grapefruit juice (I squeezed it from a real grapefruit)
1tsp minced garlic
pinch of salt

Method:
In a large sauce pan pour olive oil and heat on medium-low heat. Pour spinach into pan and stir constantly until leaves are wilted and a very dark green color. Add in garlic, pinch of salt and cook until raw taste is no longer present. Add artichokes and cook until olive oil has saturated the leaves.

Transfer all ingredients to a blender
add yogurt, cheese and grapefruit juice
Pulse six times or blend for few seconds (until the dip is a healthy green color and all ingredients are mixed)

Enjoy! Can be served hot or cold
