Black bean quinoa nachos


It's been over a month sense my last post! This is not uncharacteristic of me from this past year. This takes me back to my long stint of the no summer posts illness I had for years on here. Anyway I'll update you on what I've been up to after I share the epic nacho recipe. 

Growing up, the fall meant Sunday and Monday night football. My parents are both avid NFL fans. Growing up my dad was a 49ers fan and my mom was a Dallas Cowboys fan. Overtime though, the Indianapolis Colts and Peyton Manning won their hearts. How can they not?! 😜 

My dad would always make his famous bean dip: refried beans mixed with chorizo and a lot of shredded cheese. One of my fondest memories is of my sister and I sharing a bowl of it with chips on my bright pink tea tray in front of a football game. 

As fall approaches, I've been thinking more about those memories and craving that cheesy goodness of a dip. When you're lactose intolerant though, you've gotta find a new flavor to bring into the mix. 

Voilá, black bean quinoa nachos were born. 


What you'll need: 
1 tbsp cilantro 
1/2 avocado
1 tsp lime juice 
1 cup refried black beans 
1 c quinoa 
1 can rotel 
15-20 tortilla chips 

Method: 
1. Cook quinoa as directed on box
2. Once cooked add black beans, lime juice and rotel. Cook until heated and bubbling. 
3. Pour into bowl and add all other ingredients. 
4. Enjoy!

College food hacks

What should I eat in the dorms? How often an I eat the baked ziti without being a glutton? How do I avoid the freshman 15? These are a few questions college students navigate through. As a college graduate myself I navigated nutrition throughout my entire time in college. It's where I figured out what was healthy and how to cook! 

Cooking in a dorm or crappy house can be a challenge though. Here are a few staples I used to make in college or found in the dorms. 


Breakfast
Oatmeal
Cereal & granola 
Granola bars
Lots of coffee


Lunch & dinner
Salad (we had a salad spinner at my dorm that a frequented) 
Make your own stir fry
Wraps
Mexican bowls
Healthy vegetarian boxed meals (Annie's or healthy choice)
